Tex-Mex Brisket Fajitas

Ingredients

  • 2 1/2 – 3 kg (5 1/2 – 6 1/2 lbs) Brisket
  • 1 1/2 cups Tex-Mex or Mexican rub of your choice, available on most grocers’ shelves
  • 4 – 5 Onions
  • 3 Bell peppers, red, yellow, green or a mix

To serve:

  • 12 – 18 Corn or flour tortillas
  • Fresh coriander
  • Grated cheddar or pepperjack cheese
  • Mexican crema or sour cream
  • Fresh tomatoes, diced
  • Lettuce, shredded
