Ingredients

2 1/2 – 3 kg (5 1/2 – 6 1/2 lbs) Brisket
1 1/2 cups Tex-Mex or Mexican rub of your choice, available on most grocers’ shelves
4 – 5 Onions
3 Bell peppers, red, yellow, green or a mix

To serve:

12 – 18 Corn or flour tortillas
Fresh coriander
Grated cheddar or pepperjack cheese
Mexican crema or sour cream
Fresh tomatoes, diced
Lettuce, shredded
